Day 1: Mexican Toast!

I wanted to find a new way to eat Mexican food, without the tortilla.

Fancy Mortar and Pestle
First I pitted and mashed up an avocado with a bit of lime juice. I kind of want one of these fancy Mortar and Pestle things that I've seen at the restaurants where they make your gauc right in front of you, but I'll use a bowl and fork for now.

I spread that on two slices of Ezekial bread. On top of that I spread some no salt added Pinto Beans (would like to get into using more dried beans, but there is only so much time in the day). Over that I added some organic salsa, sprinkled some nutritional yeast, fresh cilantro and put in the oven for 10 min at 400 degrees.
