Day 13: A Day with Daiya

After making a vegan pizza on Day 8, several friends asked me via Facebook about vegan cheese alternatives and I didn't have much to tell them.  As I've gone into this adventure, I've wanted to stay away from processed foods or foods pretending to be other foods (like vegan hotdogs, boca burgers, vegan nuggets etc). However, Amber LOVES cheese, so for her sake, I thought I'd give it a go and I stopped by the local grocery store for some Daiya.

I followed pretty much the same recipe with the rice potato crust, fresh veggies, but instead of spinach, I tossed on the Daiya.

And the result?

I mean, it kinda looked like cheese. It kinda melted like cheese. The texture was kinda like cheese. But it's not cheese. Amber thought it was decent, so if she'd like it in the future, I'd use it again, but I'd prefer to just toss the spinach back on. Besides, it contains canola and safflower oil, which I generally shy away from.

However, for those of you with food allergies, it might be a great substitute as it's:
  • Cholesterol free
  • Trans Fat free
  • Dairy free
  • Free of all animal products (Vegan)
  • Free of common allergens including: Dairy (casein and lactose), soy, gluten, eggs, peanuts and tree nuts
  • Free of Artificial Ingredients
  • Free of Preservatives
  • Free of Hormones & Antibiotics
  • Kosher

  1. Now that you're 13 days into the plant diet, do you still feel like you have increased (or increasing) energy, or has it stabilized?

    Do you miss eating meat (okay, even fish) at all? :)

    By the way, great graphics, comments and posted recipes - very entertaining and informative.

  2. It's hard to say energywise as Stella has been sick, so I haven't been getting quality sleep, although I do feel better overall. I also no longer get those food comas after eating a meal, so I think my energy levels are more stable throughout the day.

    I'm not missing meat yet. Red meat sounds really heavy to me and cheese sounds greasy, but give me another 2-6 weeks and I may change my tune there. It's strange that after only 13 days, I don't have the same desire for salt and animal fat. It feels good to eat light and clean. I think part of it has to do with all of the fiber and easy digestion as well.

  3. Also, I've been working out more consistently (6 days a week), which may just mean I have the energy to do so whereas before I was too tired. As of today, I've dropped 8 pounds since I started on the 1st. It might be a lot of water weight, but I'm definitely lighter :)
